- pound bacon, diced
- pounds ground beef chuck
- large onion, chopped
- /4 cup steak sauce
- salt and pepper to taste
- pound American cheese slices

I start by preheating the grill to high heat. In a large skillet, cook the diced bacon over medium heat, stirring, until nearly crisp. Add the chopped onion and cook until the bacon is crisp and the onion is tender. Using a slotted spoon, transfer the bacon and onion to a food processor and pulse a few times to finely chop—don’t purée. In a large bowl, combine the bacon mixture, ground chuck, steak sauce, salt, and pepper. Mix well with your hands and form into 16 patties. Grill patties for 5 minutes per side, or until cooked through. Top each with a slice of American cheese during the last minute.
