Preheat your oven to 350°F (175°C). In a skillet over medium heat, cook the bacon slices just until the fat starts to render and they're still pliable—about 5 minutes per side. You want them cooked but not crispy, so they wrap easily. Drain on paper towels. Pat the pork chops dry with paper towels

this helps the bacon stick. Wrap two slices of bacon around each pork chop, securing with toothpicks if needed. Place the wrapped chops in a single layer in a baking dish. Spoon a tablespoon of cheese sauce over the top of each chop, letting it pool slightly. Slide the dish into the oven and bake for one hour, or until the pork reaches an internal temperature of 145°F. Let them rest for 5 minutes before serving to lock in the juices. I like to drizzle any pan drippings over the top right before plating.
