First, fry the chopped bacon in a large skillet over medium heat until it's perfectly crispy. Then remove the bacon and drain all but one tablespoon of the flavorful fat, leaving that in the pan. Next, add a teaspoon of olive oil, the chopped red onion, red pepper flakes, and minced garlic. Stir everything over medium heat just until the onion begins to soften. That's when you toss in the baby bok choy—leave the leaves whole if they're small, or halve them lengthwise. I like to cover the skillet and let it steam for 3 to 5 minutes, which gently wilts the greens while keeping the crunch. After that, remove the lid and stir-fry for another couple of minutes until the bok choy is tender but still has a pleasant bite. Finally, stir the crispy bacon back in, season with salt to taste, and serve it piping hot. This side dish pairs wonderfully with grilled meats or a simple roasted chicken.
