Ingredients

  • ounces shredded Cheddar cheese
  • ounces cream cheese, softened
  • /4 cup black olives, chopped
  • /2 teaspoon Worcestershire sauce
  • /4 teaspoon onion salt
  • pinch garlic salt
  • pinch celery salt
  • (4 ounce) jar dried beef, chopped

Instructions

    In a large mixing bowl, combine the shredded cheddar, softened cream cheese, chopped olives, Worcestershire sauce, onion salt, garlic salt, and celery salt. I like to use a sturdy spoon or my hands to blend everything until completely smooth and evenly mixed. Once combined, shape the mixture into a ball with your hands. Wrap the ball tightly in foil and refrigerate for at least 30 minutes to firm up. About half an hour before you’re ready to serve, take the cheese ball out of the fridge. Unwrap it and reshape if needed to make it round and attractive. Spread the chopped dried beef on a plate and roll the cheese ball around until it’s completely coated in the beef, patting gently to help it adhere. Place the coated ball on a serving plate, cover loosely, and chill for several hours or overnight. This chilling time really allows the flavors to meld together and the ball to set firmly. When you’re ready, set it out with keto-friendly crackers, celery sticks, or cucumber slices for dipping.

I like to soften the cream cheese to room temperature before mixing—it makes blending much easier and gives a smoother texture. Also, blot the dried beef briefly with a paper towel to remove excess salt if you prefer a milder taste.
