Shape the mixture into a round ball—it might be a bit sticky, so I lightly oil my hands to make it easier. Next, in a shallow dish, combine the chopped parsley and walnuts. Roll the cheese ball in this mixture, pressing gently so the coating sticks all over. Place the coated ball on a serving plate, cover loosely with plastic wrap, and refrigerate for at least an hour to firm up. For best results, chill overnight to let the flavors meld. Before serving, let it sit at room temperature for 10 minutes to soften slightly. Present with a cheese knife and a selection of low-carb crackers, cucumber slices, or celery sticks for dipping.
