Start by combining the salt, cumin, coriander, and minced garlic with a tablespoon of olive oil in a small bowl to form a paste. Pat the pork chops dry with paper towels—this step is crucial for a good sear. Season both sides generously with salt and pepper, then spread the spice paste evenly over the chops, pressing it in so it adheres. Heat the remaining olive oil in a heavy skillet over medium-high heat. Once the oil shimmers, lay the chops in the pan without crowding. Cook undisturbed for about 5 minutes, until a deep golden crust forms. Flip and cook for another 4-5 minutes, until the internal temperature reaches 145°F for medium-rare, or 160°F for well-done. I find that letting the chops rest for a few minutes after cooking makes all the difference in keeping them juicy.
