Slice the green onions on an angle and toss them in along with the minced garlic. Nestle the pork steaks into the skillet, letting them sear on one side for about 8 to 10 minutes with the lid on. The steam works wonders for tenderness. Flip each steak carefully, cover again, and cook the other side for another 8 to 10 minutes. The meat should start to look opaque. Remove the lid and let the steaks continue to cook uncovered for about 10 minutes more, allowing the sauce to reduce and cling to the pork. I like to spoon the pan juices over the steaks a few times as they finish. Check for doneness with a thermometer—it should read 160°F at the thickest part.
