Ingredients

  • /2 cup lime juice
  • /2 cup chopped green onions
  • tablespoons vegetable oil
  • tablespoons minced fresh cilantro
  • tablespoons chopped seeded jalapeno peppers
  • teaspoon salt
  • /2 teaspoon pepper
  • (6 ounce) halibut steaks

    In a large resealable bag, combine the lime juice, green onions, oil, cilantro, jalapeño, salt, and pepper. Add the halibut steaks, seal, and turn to coat. Let them marinate in the fridge for 10-15 minutes, turning once. Meanwhile, cook the bacon in a skillet over medium heat until it’s cooked but still pliable—not crisp. Drain on paper towels. Discard the marinade from the halibut. Wrap two bacon slices around each steak, securing with soaked wooden toothpicks. I like to preheat the grill and coat the rack with nonstick spray. Place the fish bacon-side down on the grill. Cover and cook over medium heat for 4-6 minutes per side, until the fish flakes easily with a fork. I find the bacon gets nicely charred while the halibut stays moist. Remove the toothpicks before serving.

Chef's Tip

I always soak the toothpicks in water for 10 minutes before using to prevent them from burning on the grill. For an extra layer of flavor, brush a little of the bacon fat over the halibut before grilling.
