In a large bowl, crack the eggs and add the milk, then beat vigorously with a whisk until the whites and yolks are fully blended and the mixture is a uniform pale yellow. Toss the cubed smoked ham into the skillet and sauté for about two minutes—you want it heated through and just starting to glisten with its own juices. Pour the egg mixture right over the ham, letting it spread across the pan. As the edges begin to firm up, draw a spatula through the eggs, pushing cooked curds toward the center. When the eggs are still slightly runny on top, scatter the shredded Cheddar across. Fold the cheese into the eggs gently, cooking just until the cheese melts and the eggs are set but still tender. I always taste a bit and add a crack of pepper and a light sprinkle of salt, if needed, remembering that the ham and cheese already bring saltiness. Serve at once, and watch it disappear.
