I always start by preheating the grill to medium-high and giving the grates a light coat of oil to prevent sticking. In a large bowl, combine the beaten eggs, minced garlic, crumbled feta, thawed spinach (make sure it's well-drained), and ground turkey. Mix gently with your hands until everything is evenly distributed—overworking the meat can make the burgers tough. Shape the mixture into 8 equal patties, pressing a slight indent in the center of each so they cook flat. Place the patties on the hot grill and cook for about 8-10 minutes per side, until the internal temperature reaches 165°F and there's no pink in the middle. I let them rest for a couple of minutes before serving—this helps the juices redistribute. They're wonderful on a bed of greens or wrapped in lettuce for a low-carb bun.
