Preheat the oven to 350°F. Pat the boneless pork loin dry with paper towels—this helps the seasoning adhere. In a small bowl, mix the onion powder, garlic powder, and black pepper. Rub this blend evenly over the entire surface of the roast, making sure to coat every nook and cranny. Place it in a roasting pan, fat side up if there is a fat cap. Slide the pan into the oven and roast for about 90 minutes. The key is cooking until the center is no longer pink and an instant-read thermometer inserted in the thickest part reads 160°F. I like to check the temperature after 75 minutes to be safe
