Ingredients

  • oz salt beef, fat removed and diced
  • cups water
  • salt and pepper to taste
  • cups fresh okra, cut into 1/2 inch slices
  • cup medium shrimp, peeled and deveined
  • oz cod fillets, cubed
  • /4 cup chopped fresh basil
  • tablespoon lemon juice

    Start by soaking the diced salt beef in plenty of cool water overnight to draw out excess salt. I usually swap the water once for quicker results. The next day, drain and rinse it well. In a large pot, bring 12 cups of fresh water to a rolling boil. Season with a pinch of salt and some pepper, but go gently—the beef will carry its own salinity. Add the okra slices, then reduce the heat to a gentle simmer. Let it bubble for 20 minutes, allowing the okra to release its natural thickener. Now stir in the reserved beef, shrimp, and cod chunks. Simmer for another 10 minutes until the seafood turns opaque and the beef is tender. Just before serving, fold in the fresh basil and a splash of lemon juice. I find that citrus lift ties everything together beautifully. Ladle into bowls and enjoy.
