Slice the onions into even rings and scatter them over the chops, tucking some underneath if you like. Pour the quarter cup of water around the edges—this creates steam that keeps the meat incredibly moist. Cover the dish tightly with aluminum foil, sealing well to trap the steam. Bake for exactly one hour, then without removing the foil, lower the oven temperature to 300°F and continue baking for another 30 minutes. This two-stage method allows the onions to soften and caramelize gently while the pork becomes fork-tender. When time’s up, carefully remove the foil to avoid the steam, and test with a thermometer—pork should reach 145°F internally. Let the chops rest in the dish for five minutes before serving
