First, I melt the butter in a microwave-safe bowl—just 15 to 30 seconds on high does the trick. Then I stir in the Old Bay seasoning and lemon juice until well combined. Lightly coat a microwave-safe dish with cooking spray and arrange the shrimp in a single, even layer. Pour the butter mixture over the shrimp, making sure every piece gets some love. Now for the cooking: microwave on high for 6 minutes total, but pause after the first 2 minutes to rearrange the shrimp, moving the ones around the edges to the center and vice versa. Cook another 2 minutes, then pause and rearrange again. Finish with the final 2 minutes until the shrimp turn pink and opaque. Serve immediately, spooning any extra butter sauce from the dish over the top. A sugar-free cocktail sauce can be a great dipping option, though they’re flavorful enough on their own.
