Start by letting the cream cheese and butter come to room temperature so they blend smoothly. In a large mixing bowl, beat them together until creamy. I like to use an electric mixer for this, but a sturdy spoon works too. Next, mix in the instant cheddar cheese sauce mix, shredded cheddar, green onion, lemon juice, and dried parsley until everything is well combined. The mixture should be thick and hold together. Divide it into two equal portions and shape each into a ball or log. Place the chopped walnuts on a plate and roll each cheese ball in it, pressing gently so the nuts adhere evenly. Wrap them in plastic and refrigerate for at least two hours, or until firm. This resting time lets the flavors meld beautifully. When ready to serve, set them out with keto crackers or crisp vegetables.
