Season with salt and pepper, then use your hands to gently mix everything until just combined—overworking can make the burgers tough. Shape the mixture into four equal patties, pressing a slight indent in the center so they cook evenly. Lightly oil the grill grate, then place the patties over direct heat. Grill for about 10 minutes per side, flipping only once to keep them intact. I like to close the lid for a smoky depth. In the last two minutes, top each burger with crumbled blue cheese and close the lid briefly to melt it. Remove once the internal temperature reaches 165°F.
