Begin by draining the jar of mushrooms well and dicing them into small pieces. In a mixing bowl, combine the ground turkey, diced mushrooms, dry beef stew seasoning, and beaten eggs. Using a wooden spoon or your hands, mix until just combined—be careful not to overwork the meat, which can lead to dense patties. Divide the mixture into four equal portions and shape them into patties about ¾-inch thick. I find that pressing a small indent in the center with your thumb keeps them from puffing up during cooking.

Set a large skillet over medium heat and add the olive oil. When the oil is hot but not smoking, place the patties in the pan, leaving space between them. Cook for 10 to 12 minutes on the first side until a nice crust forms. Flip carefully with a spatula and cook for another 10 to 12 minutes. To ensure they are fully cooked, insert a meat thermometer into the thickest part—it should register 165°F. Remove the patties to a plate and let them rest for a few minutes. This resting time helps lock in the juices. Serve hot with your favorite keto sides.
