Lay the bacon strips across the top, overlapping them slightly, and secure with toothpicks. Sprinkle paprika over the bacon for a hint of smokiness. Pour the beef broth into the pan, taking care not to pour it over the bacon. Roast for 15 minutes at the high heat to start the crisping, then reduce the temperature to 350°F. Continue roasting for about 1 hour and 15 minutes, basting with the pan juices every 15 minutes—this is the secret to that deep, rich flavor. Check that the internal temperature reaches 180°F in the thickest part of the thigh.
