Ingredients

  • green onions, chopped, divided
  • tomato, chopped, divided
  • slices bacon
  • cup sliced fresh mushrooms
  • eggs
  • /3 cup sour cream
  • cup shredded cheddar cheese
  • cup shredded mozzarella cheese

Instructions

  1. Step 1

Preheat oven to 325°F and grease a 13x9-inch baking dish. Chop the green onions and tomato, setting aside 2 tablespoons of each for garnish. In a large skillet, cook bacon until crisp. Use a slotted spoon to transfer bacon to paper towels, leaving 1 tablespoon drippings in the pan. Sauté mushrooms in the drippings for 2 minutes until tender. Remove from heat, crumble bacon, and return to skillet along with the onions and tomatoes (except garnishes)

  2. Step 2

stir well. Whisk eggs and sour cream until smooth, then pour into the prepared dish. Scatter the bacon mixture evenly on top, then sprinkle both cheeses over everything. Bake for 30 minutes or until the center is set and no longer jiggles. Sprinkle the reserved fresh onions and tomatoes on top. Let it rest for 5 minutes before cutting

  3. Step 3

I find this step ensures neat squares.

Chef's Tip

I always grate cheese from a block rather than using pre-shredded, as it melts more smoothly and avoids added starches. To deepen the flavor, I stir a teaspoon of Dijon mustard into the eggs—it adds a subtle tang that complements the bacon beautifully.

Storage Tips

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat portions in the microwave or a 300°F oven until warmed through. It also freezes well—wrap tightly and freeze for up to a month, then thaw overnight before reheating.

Variation Tips

For a flavor twist, swap bacon for cooked sausage or ham. Add a pinch of nutmeg to the egg mixture for warmth. Pair with a crisp green salad or roasted asparagus to round out the meal. If you like spice, a dash of hot sauce in the eggs works wonders.
