I start by slicing a medium tomato into 1/2-inch thick rounds and lay them on paper towels to drain for about 10 minutes. This step removes excess moisture so the tomato doesn’t turn soggy under the broiler. Once drained, I place the slices on a lightly greased broiler pan and season with garlic salt. Next, spread a thin layer of mayonnaise over each slice—it melts into a creamy base that keeps the toppings in place. Then, load them up with crumbled cooked bacon, a mound of shredded mozzarella cheese, and a sprinkle of dried oregano. Slide the pan under a preheated broiler, positioning it about 3 inches from the heat source. Broil for just 2 to 3 minutes, keeping an eye on them. The cheese should be fully melted and just starting to get golden spots. The aroma is irresistible. Remove them carefully and let cool for a minute before serving. These little rounds are fantastic on their own or paired with a crisp salad.
