Warm Blue Cheese Dip with Garlic and Bacon

There’s something about a warm, creamy dip that makes any gathering feel special. This keto-friendly blue cheese dip, loaded with crispy bacon and garlic, has become one of my go-to appetizers. It bakes up bubbly and golden, perfect for scooping with crunchy low-carb vegetables or crackers.

Ingredients

  • slices bacon
  • cloves garlic, minced
  • ounces cream cheese, softened
  • /4 cup half-and-half
  • ounces blue cheese, crumbled
  • tablespoons chopped fresh chives

Instructions

  1. Step 1

I start by crisping the bacon in a large skillet over medium-high heat until evenly browned. Once done, I transfer it to paper towels to drain, then crumble it into small pieces. In the warm bacon fat, sauté the minced garlic just until softened—about a minute—then remove from heat. Preheat your oven to 350°F. In a mixing bowl, beat the softened cream cheese and half-and-half with an electric mixer until smooth. Fold in the crumbled bacon, cooked garlic, blue cheese crumbles, and chopped chives until everything is well combined. Spoon the mixture into a medium baking dish and spread it evenly. Bake covered for 30 minutes, until the edges are lightly browned and the center is warm. Let it sit for a couple of minutes before serving—trust me, the aroma will draw everyone to the table.

Chef's Tip

For an extra-smooth dip, make sure your cream cheese is truly at room temperature before mixing. I also like to reserve a tablespoon of crumbled bacon and chives to sprinkle on top right before serving for a fresh finish.

Storage Tips

Store leftover dip in an airtight container in the fridge for up to 3 days. Reheat gently in the microwave or cover with foil and warm in the oven at 300°F until heated through.

Variation Tips

Swap the bacon for crispy pancetta for a richer bite, or add a diced jalapeño for a spicy kick. For a more pungent blue cheese flavor, try using Gorgonzola instead. Serve with celery sticks, cucumber slices, or keto crackers.
