Step 1
Start by measuring out the kosher salt, coriander, cumin, chili powder, paprika, allspice, and black pepper. In a mixing bowl, combine all the spices. I find it best to whisk them together to ensure even distribution. Once blended, transfer the rub to an airtight jar. When you're ready to cook, take about a tablespoon per serving and massage it into the meat. It adds a warm, earthy flavor that's perfect for pork, but you can use it on chicken or beef too. This rub is a staple in my kitchen, especially for keto meals where big flavor is key. The cumin and coriander bring a fragrant, slightly citrusy note, while the chili powder gives a gentle heat. To apply, simply pat the meat dry, then coat it evenly with the rub. I like to press it in firmly to create a crust. Grilling or pan-searing locks in the juices. For best results, let it rest at room temperature before cooking.
