Then I place the pork loin inside, seal the bag, and give it a good shake and massage to coat every inch of the meat with the seasoning mix. This method ensures a flavorful crust. Next, I transfer the roast to a baking dish, making sure to pour any leftover seasoning from the bag over the top. I pop it into the oven and let it cook for about an hour. The key is using a meat thermometer—I pull it out when the internal temperature hits 160°F for perfectly cooked pork. Once it’s done, I let it rest for 10 minutes under foil to lock in the juices. Carving against the grain yields tender slices.
