Aunt Phyllis' Magnificent Cheese Ball

This cheese ball recipe comes straight from my Aunt Phyllis, and it’s been a family favorite for years. With a rich blend of cream cheese, cheddar, and crunchy walnuts, it’s naturally keto and ridiculously easy to make. Perfect for any gathering, it always disappears fast.

Ingredients

  • oz cream cheese, softened
  • /2 cup butter
  • tbsp instant Cheddar cheese sauce mix
  • cups shredded Cheddar cheese
  • tbsp thinly sliced green onion
  • tbsp lemon juice
  • tsp dried parsley
  • /2 cup chopped walnuts

Instructions

  1. Step 1

Start by letting the cream cheese and butter come to room temperature so they blend smoothly. In a large mixing bowl, beat them together until creamy. I like to use an electric mixer for this, but a sturdy spoon works too. Next, mix in the instant cheddar cheese sauce mix, shredded cheddar, green onion, lemon juice, and dried parsley until everything is well combined. The mixture should be thick and hold together. Divide it into two equal portions and shape each into a ball or log. Place the chopped walnuts on a plate and roll each cheese ball in it, pressing gently so the nuts adhere evenly. Wrap them in plastic and refrigerate for at least two hours, or until firm. This resting time lets the flavors meld beautifully. When ready to serve, set them out with keto crackers or crisp vegetables.

Chef's Tip

For an even deeper flavor, I toast the walnuts lightly in a dry pan before rolling—just a minute or two over medium heat brings out their nuttiness without adding carbs.

Storage Tips

Keep the cheese ball tightly wrapped in the fridge for up to a week. If it softens too much, a quick 15-minute chill firms it right back up.

Variation Tips

Swap walnuts for pecans or almonds for a different crunch. Add crumbled bacon or a dash of hot sauce for a savory kick. Serve with celery sticks, cucumber rounds, or homemade keto crackers.
