Preheat your oven to 350°F. While it warms up, arrange the chicken breasts in a shallow baking dish and pour the hot wing sauce over them. Let them sit at room temperature, soaking in that tangy flavor. Once the oven is hot, slide the dish in and bake for 20 minutes. The sauce will start to bubble and the chicken will turn opaque. After 20 minutes, pull the dish out and scatter the red and yellow bell pepper strips over the chicken. Lay a slice of pepper jack cheese on top of each breast, letting it drape over the peppers. Return to the oven and bake for another 15 minutes. The cheese should be fully melted and lightly golden, and the chicken juices will run clear with no pink in the center. I usually let it rest for 5 minutes before serving—that quick rest keeps everything juicy.
