I like to prepare these when I'm short on time but want something impressive. First, drain the water chestnuts and pat them dry. Then, cut the bacon slices in half crosswise—this makes just the right amount to wrap each chestnut snugly. Wrap each water chestnut in a half-slice of bacon and secure it with a toothpick to hold everything in place. Next, arrange them on a microwave-safe plate lined with a double layer of paper towels, leaving a little space between each one so the bacon cooks evenly. Microwave on high for about 5 to 8 minutes, checking after 5 minutes

the bacon should be crispy and golden. Once done, let them cool for a few minutes—they’re incredibly hot right out of the microwave. The paper towels absorb excess grease, leaving a perfectly crunchy bite. Serve them warm as a crowd-pleasing appetizer.
