Chili-Lime Chicken Kabobs

These chili-lime chicken kabobs are a staple in my keto dinner rotation. The marinade infuses the chicken with bold, tangy flavors that only take minutes to prepare. Grilling brings out a subtle char that complements the citrusy kick perfectly.

Chili-Lime Chicken Kabobs

Ingredients

  • tablespoons olive oil
  • /2 tablespoons red wine vinegar
  • lime, juiced
  • teaspoon chili powder
  • /2 teaspoon paprika
  • /2 teaspoon onion powder
  • /2 teaspoon garlic powder
  • cayenne pepper to taste
  • salt and freshly ground black pepper to taste
  • pound skinless, boneless chicken breast halves - cut into 1 1/2 inch pieces
  • skewers

Instructions

  1. Step 1

I begin by whisking together the olive oil, red wine vinegar, and fresh lime juice in a small bowl. Then I stir in the chili powder, paprika, onion powder, garlic powder, and a pinch of cayenne for heat. Season with salt and pepper. Next, I place the chicken pieces in a shallow dish and pour the marinade over them, making sure each piece is well coated. Cover and refrigerate for at least an hour

  2. Step 2

longer marinating deepens the flavor. When ready to cook, preheat the grill to medium-high. Thread the chicken onto skewers, shaking off excess marinade and discarding the rest. Lightly oil the grill grates to prevent sticking. Grill the skewers for 10 to 15 minutes, turning occasionally, until the chicken is cooked through and the juices run clear. The outside gets slightly charred while staying tender inside. Serve immediately with an extra squeeze of lime if desired.

Chef's Tip

I always soak wooden skewers in water for 30 minutes before grilling to prevent burning. If you want an extra pop of flavor, brush the kabobs with melted butter mixed with lime zest right after they come off the grill.

Storage Tips

Store any leftovers in an airtight container in the fridge for up to 3 days. To reheat, gently warm in a skillet over medium-low heat or in the microwave until just heated through to retain moisture.

Variation Tips

Pair with a crisp keto coleslaw or grilled vegetables like zucchini and bell peppers. For a spicier twist, add more cayenne or a dash of hot sauce to the marinade. These kabobs also work wonderfully on a cast-iron grill pan indoors.
