I begin by whisking together the olive oil, red wine vinegar, and fresh lime juice in a small bowl. Then I stir in the chili powder, paprika, onion powder, garlic powder, and a pinch of cayenne for heat. Season with salt and pepper. Next, I place the chicken pieces in a shallow dish and pour the marinade over them, making sure each piece is well coated. Cover and refrigerate for at least an hour

longer marinating deepens the flavor. When ready to cook, preheat the grill to medium-high. Thread the chicken onto skewers, shaking off excess marinade and discarding the rest. Lightly oil the grill grates to prevent sticking. Grill the skewers for 10 to 15 minutes, turning occasionally, until the chicken is cooked through and the juices run clear. The outside gets slightly charred while staying tender inside. Serve immediately with an extra squeeze of lime if desired.
