Preheat oven to 325°F and grease a 13x9-inch baking dish. Chop the green onions and tomato, setting aside 2 tablespoons of each for garnish. In a large skillet, cook bacon until crisp. Use a slotted spoon to transfer bacon to paper towels, leaving 1 tablespoon drippings in the pan. Sauté mushrooms in the drippings for 2 minutes until tender. Remove from heat, crumble bacon, and return to skillet along with the onions and tomatoes (except garnishes)

stir well. Whisk eggs and sour cream until smooth, then pour into the prepared dish. Scatter the bacon mixture evenly on top, then sprinkle both cheeses over everything. Bake for 30 minutes or until the center is set and no longer jiggles. Sprinkle the reserved fresh onions and tomatoes on top. Let it rest for 5 minutes before cutting
