Begin by cooking the bacon in a large skillet over medium-high heat until crisp, about 10 minutes. Transfer the bacon to a paper towel-lined plate, leaving about a tablespoon of the drippings in the pan. Once cooled, crumble the bacon and set aside. Preheat your broiler and position the oven rack about 6 inches from the heat. In a separate skillet, combine the reserved bacon drippings, butter, and garlic salt over medium heat. When the butter melts, add the scallops and cook until they develop a light brown sear on each side, roughly 4 minutes per side. I find that patting scallops dry before cooking ensures a beautiful crust. Transfer the scallops to a baking dish, spoon the butter sauce over them, then drizzle with horseradish sauce and top with the crumbled bacon. Broil briefly, just until the sauce bubbles—about 1 minute. Serve immediately while warm.
