First, I preheat the oven to 350°F (175°C) because a steady temperature is key. While the oven warms, I cook a slice of bacon in a skillet over medium-high heat until it's browned but still pliable—you want it to bend without breaking. I drain the bacon on a paper towel briefly. Using a brush or my fingers, I coat the bottom of a muffin cup with melted butter (or saved bacon grease for extra flavor). Then I carefully wrap the bacon slice around the inside edge of the cup, creating a little nest. Next, I crack a fresh egg right into the center. A pinch of salt and pepper goes on top. The muffin tin goes into the oven, and I bake it for about 10 minutes. After that, I pull it out and place a quarter slice of cheddar cheese over the egg. Back into the oven it goes for another 3-5 minutes, just until the cheese melts beautifully and the egg white is set but the yolk is still slightly runny—my favorite way. A gentle wiggle of the pan tells me it's done. I let it cool just a minute before loosening the edges with a knife and lifting it out. It's such a simple pleasure, and it feels like a special meal every time.
