Rub this mixture generously all over the chicken, taking care to work it into the slits. Line a rimmed baking sheet with aluminum foil to catch any drips, then place the seasoned drumsticks on it. Cover them with another sheet of foil and use a fork to poke several small holes in the top—this traps steam while letting some escape. Bake in the preheated oven for 35-40 minutes. After that, peel back the foil and distribute the onion chunks around the chicken, then spread the crushed garlic on top. Return the pan to the oven, uncovered, and bake for an additional 10 minutes, until the skin is crisp and the juices run clear. I always check that the internal temperature hits 165°F for safety. Allow the chicken to rest for a couple of minutes before plating—this keeps it moist. Serve straight from the pan for a rustic, hearty meal.
