Pork Chop Packets

These keto pork chop packets have become a weeknight favorite in my kitchen. The combination of juicy grilled pork and tangy sauerkraut, seasoned simply with caraway and nutmeg, delivers a satisfying meal without the carbs. I love how the foil packs lock in moisture and flavor, making clean-up a breeze. It’s a foolproof way to enjoy a hearty dinner that keeps you on track with your low-carb goals.

Pork Chop Packets

Ingredients

  • bone-in center cut pork loin chops
  • /2 teaspoon salt-free lemon-pepper seasoning
  • (14 ounce) can sauerkraut, rinsed and well drained
  • /4 teaspoon caraway seeds
  • /4 teaspoon ground nutmeg

Instructions

  1. Step 1

Begin by preheating your grill for dual-zone cooking with direct high heat on one side and no heat on the other. Pat the pork chops dry and season both sides with the lemon-pepper seasoning. Grill them directly over high heat for 2.5 minutes per side to achieve a golden sear. After searing, I transfer the chops to a platter while preparing the foil packets. Tear off four large squares of heavy-duty foil. Place one chop in the center of each, top with a quarter of the sauerkraut, and then add a tiny pinch of caraway seeds and nutmeg. Seal the foil tightly, leaving a little room for steam. Move the packets to the cool side of the grill, cover, and cook for 15-20 minutes until an instant-read thermometer inserted through the foil reads 160°F. Let them rest a minute before carefully opening— the steam is hot. The results are juicy and packed with flavor.

Chef's Tip

A pat of butter on top of the sauerkraut before sealing the packets adds a velvety richness. It melts into the pork, blending with the tangy brine for a subtle sauce.

Storage Tips

Refrigerate leftover packets in the foil for up to 3 days. To reheat, place in a 350°F oven or air fryer for 10 minutes, or open the foil and warm in a skillet over low heat with a splash of water.

Variation Tips

For a complete keto meal, serve with creamy cauliflower mash or roasted broccoli drizzled with olive oil. If sauerkraut isn't your favorite, try thinly sliced Brussels sprouts or a mix of asparagus and mushrooms. Chicken thighs also work well—just cook to 165°F.
