First, preheat your oven to 450°F (230°C). While it heats, take the softened Neufchatel cheese and spread a thin layer onto each slice of prosciutto. Next, group 2 or 3 asparagus spears together, depending on their thickness, and wrap a cheese-coated prosciutto slice around the bundle, spiraling slightly to secure. Place the wrapped bundles seam-side down on a baking sheet, leaving a little space between each one to allow for even crisping. Then slide the sheet into the hot oven and bake for about 15 minutes. The prosciutto turns golden and crispy at the edges, while the asparagus becomes perfectly tender. I like to check them a minute early to avoid overcooking—the asparagus should still have a bit of bite. Once done, transfer to a serving plate and let them cool for just a minute before enjoying. For an extra flavor boost, you can sprinkle a little black pepper or garlic powder on the cheese before wrapping. Serve them warm for the best texture.
