Slowly whisk in the melted butter until fully incorporated, then gradually pour in the boiling water while whisking continuously. Cook over the simmering water, stirring constantly, until the sauce thickens enough to coat the back of a spoon—about 5 minutes. Remove from heat and immediately whisk in the lemon juice, salt, and a pinch of cayenne pepper. I’ve always found that adding lemon off the heat preserves its bright flavor. Keep the sauce covered over warm water until ready to serve, whisking occasionally to maintain a silky texture.
