Ingredients

  • sea scallops, rinsed and drained
  • tablespoons fresh lemon juice

    First, preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper for easier cleanup. Halve each bacon slice crosswise, then wrap a piece around each scallop, securing it with a toothpick. Place the wrapped scallops on the baking sheet, leaving a little space between them. Drizzle the fresh lemon juice evenly over the top. I sometimes add a pinch of black pepper for a little kick. Bake for 15 to 20 minutes, until the bacon is crisp and the scallops are opaque and tender. If you like extra-crisp bacon, you can briefly broil them for 1–2 minutes at the end—just keep a close eye to avoid burning. Remove the toothpicks and arrange the scallops on a serving platter. A final spritz of lemon juice can brighten the flavors. Serve them while they’re still warm, as they taste best right out of the oven.

Chef's Tip

I always pat the scallops completely dry with paper towels before wrapping. Any moisture will steam the bacon and prevent it from crisping up properly. Soaking the toothpicks in water for 10 minutes also helps them not burn in the oven.

Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat them in the oven or air fryer at 350°F for 5–7 minutes to restore crispness—avoid the microwave to keep the bacon from going soggy.
