Start by placing the sun-dried tomatoes and garlic clove into a blender or food processor. I like to let the machine run until they form a smooth paste, which takes about 30 seconds. Then, add the crushed red pepper, dried parsley, basil, chili powder, salt, and pepper. Pulse a few times to incorporate the spices evenly. Next, spoon in the softened cream cheese and drained minced clams. Blend again until the mixture becomes completely smooth and well combined, stopping to scrape down the sides if needed. I find it helpful to let the spread chill in the refrigerator for at least an hour before serving—this allows the flavors to meld beautifully. Transfer to a serving bowl, cover, and refrigerate until you’re ready to enjoy. When it’s time to serve, garnish with a sprinkle of paprika or fresh herbs for a pop of color.
