- pounds bottom round roast, thinly sliced

- fresh hot chile peppers, seeded

Start by laying out the beef slices and seasoning them lightly with salt and pepper. I find it easiest to work on a clean cutting board. Place a slice of cream cheese and a seeded chile pepper at one end of each beef slice. Carefully roll it up tightly, like a little cigar. Then, take a strip of bacon and wrap it lengthwise around the beef roll. Secure it with a second bacon strip wrapped around the middle to hold everything in place. Use a toothpick to keep it all together. Repeat with all slices. Preheat your grill to medium-low or your oven to 350°F. Place the steak deals in a disposable pan for the grill or a 9x13 baking dish for the oven. Cook for 20 to 30 minutes, until the beef is cooked through and the bacon gets nice and crispy. Let them cool slightly before serving. I like to offer sour cream or guacamole on the side for dipping.
