Stuffed Tomato Basil Chicken

This stuffed chicken brings together juicy tomato, aromatic basil, and melted cheese, all hugged by crispy bacon. It’s the kind of dish that feels fancy but comes together with minimal fuss. I find the marinade infuses the meat with so much flavor while it rests, making every bite truly satisfying.

Stuffed Tomato Basil Chicken

Ingredients

  • boneless skinless chicken breasts (6 oz each)
  • /2 bottle (6 oz) garlic and herb marinade
  • fresh basil leaves
  • large tomato, thinly sliced
  • slices provolone cheese
  • slices bacon
  • /4 cup freshly grated Parmesan

Instructions

  1. Step 1

Butterfly the chicken breasts by slicing horizontally, stopping just short of cutting all the way through, then open them like a book. Place the chicken and marinade in a resealable bag, press out the air, and chill for 30 minutes—this step really locks in moisture. While the oven preheats to 500°F, take the chicken out and lay each piece on a broiler pan. On the bottom half of each breast, arrange 4 basil leaves, 2 or 3 tomato slices, and a slice of provolone. Fold the top half over to encase the filling

  2. Step 2

secure with toothpicks if needed. Cross 3 bacon slices over each bundle to wrap it snugly. Roast for 15 minutes, then carefully flip the chicken and continue roasting another 15 minutes. I like to sprinkle the Parmesan on at the end and pop it back into the oven for 2–3 minutes until the cheese is golden and bubbly. Let it rest a moment before serving.

Chef's Tip

For extra-crispy bacon, give it a quick sear in a hot skillet before wrapping—just a minute per side. I’ve found this little step makes a huge difference in texture without adding much time.

Storage Tips

Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat gently in a 350°F oven to keep the bacon crisp and the chicken tender.

Variation Tips

Swap provolone for mozzarella if you love a stretchier cheese pull. Serve alongside roasted asparagus or a simple arugula salad dressed with lemon and olive oil for a complete keto meal.
