Start by blending the tequila, Worcestershire sauce, cayenne pepper, and garlic until smooth. I find a small bullet blender works perfectly for this small batch. Place the London broil on a plate and pour the marinade over it, making sure every inch is coated. Cover and refrigerate for at least 8 hours – overnight is even better for deeper flavor. When you’re ready to cook, preheat your outdoor grill to high heat. Lightly oil the grates to prevent sticking. Remove the steak from the marinade, letting excess drip off. Grill for 7 to 8 minutes per side for a perfect medium doneness. If I prefer it more well-done, I add an extra minute or two per side, but with London broil, medium is ideal to keep it tender. Let the steak rest for 5 minutes before slicing against the grain. That step is crucial for a juicy, melt-in-your-mouth texture.
