Preheat an outdoor grill to high heat and lightly oil the grate to prevent sticking. While it heats, form the ground beef into four equal patties, pressing a shallow indent in the center of each—this helps them cook evenly. Place the patties on the hot grill and sear for 2 to 4 minutes without moving them, until a crust forms. Flip the patties and immediately top each with a dash of hot pepper sauce, a teaspoon of salsa, one slice of Cheddar, and one slice of Monterey Jack. Close the lid if you have one

the cheese will melt beautifully as the underside cooks for another 2 to 4 minutes. For well-done burgers, simply extend the time slightly. Once done, transfer to a plate and let them rest for a minute. I always let mine rest so the juices settle. Serve as is or wrapped in crisp lettuce for a low-carb bun.
